How to Make BBQ Chicken Pizza
The Ingredients
- Whole Wheat Pizza Dough. You’ll need half of my full dough recipe to make the crust for 1 BBQ chicken pizza; the other half can be frozen.
- Homemade BBQ Sauce. Or your barbecue sauce of choice.
- Garlic Powder. Adds some savory flavor to the BBQ chicken mixture.
- Shredded Chicken Breast. You can use rotisserie chicken or Baked Chicken Breasts and shred them. Alternatively, make my Crock Pot Shredded Chicken, Instant Pot Shredded Chicken, or follow the instructions in How to Cook Shredded Chicken.
- Mozzarella Cheese. Mozzarella brings the melty factor.
- Sharp Cheddar Cheese. Sharp cheddar brings the flavor.
- Red Onion. Slice this as thinly as possible—a mandoline helps.
- Green Onions. For a pop of color and pungent flavor.
The Directions
- Prepare. Position a rack in the upper third of the oven and preheat it to 425 degrees F.

- Make the BBQ Chicken. Whisk the BBQ sauce with the garlic powder, then toss in the cooked chicken.

- Shape the Crust. Roll out the dough and transfer it to a baking sheet.

- Add the Chicken. Spread the chicken mixture over the crust, leaving a 3/4-inch border.

- Finish Topping. Sprinkle the cheeses on top, followed by the red onion.
- Bake. Place the baking sheet in the oven and bake BBQ chicken pizza for 15 to 18 minutes.

- Watch the Sugar Content. I love my homemade BBQ sauce recipe, but if you’re in a time-crunch and need to use store-bought, look for a variety that’s lower in sugar. Some varieties are so cloyingly sweet, you can barely taste anything in them other than the sugar!
- Don’t Over-Work the Crust. The more you handle the homemade pizza dough, the more the gluten strands in the flour will toughen, giving you a crust with an unpleasant texture and without a lot of rise.

- 1 cup shredded mozzarella cheese about 4 ounces
- 1 cup shredded sharp cheddar cheese about 4 ounces
- 1/2 small red onion thinly sliced
- 2 green onions thinly sliced
Instructions

Place rack in upper third of the oven and preheat oven to 425°F. Line a large baking sheet with parchment paper, or dust it with cornmeal or flour.

In a large bowl, whisk together the BBQ sauce and garlic powder. Add shredded chicken and toss to coat.

Place the dough on a lightly floured work surface and roll into an 11×14-inch rectangle. Gently transfer the rolled dough to a prepared baking sheet (you can also roll out the dough on floured parchment, then lift up the crust and paper together and set them on the baking sheet). Top with the BBQ chicken, leaving a 3/4 inch border uncovered around all sides.

Sprinkle on the mozzarella, cheddar cheese, and red onion. Bake for 15-18 minutes, until the crust is crisp and golden. Sprinkle with the green onion. Let cool a few minutes, then slice and serve.
