CHIA PUDDING BASE
WHAT YOU NEED:
1 cup rolled oats
½ cup chia seeds
½ cup vanilla protein powder (I use Good Protein)*
2 cups milk (I use 2% regular milk, but any type should work)
Dash of salt, optional
Dash of cinnamon, optional
WHAT TO DO:
1-Add all dry ingredients to a large storage container and mix until combined. Pour in milk and stir again until no clumps remain.
NOTE: some protein powders absorb more/less moisture, so you may need to adjust your amount of milk.
2-Seal in an airtight container, then store in the fridge for at least an hour (even better if you can leave it overnight).
3-Once thickened, give it a stir and add additional milk as needed until you reach your desired consistency.

CRISPY CHICKEN + PICKLE SALAD
WHAT YOU NEED:
(SALAD)
1 bag pre-cut and washed slaw mix (I buy broccoli slaw, coleslaw works too)
1 cucumber, diced
1 red apple, thinly sliced & diced
3-5 pickles, thinly sliced & diced
½ cup crumbled feta cheese*
½ can white beans
Spicy chicken filet (I buy frozen from costco then air fry)
(DRESSING)
1 cup plain Greek yogurt, 0%
½ cup mayo (can decrease to ¼ cup if you want lower calorie)
1-2 whole pickles
½ cup pickle juice
1 tbsp fresh dill pickle, chopped (or use 1 tsp dried)
Dash of black pepper
Dash of salt
*NOTE: I’ve been substituting half for pressed cottage cheese lately
WHAT TO DO:
1-Add all salad ingredients, except chicken to a large bowl. Mix until combined.
2-Add all dressing ingredients to a blender cup and pulse until combined.
3-Pour dressing over salad and toss together, then serve with chicken on top.
NOTE: store salad in an airtight container separate from chicken and dressing if prepping ahead of time.

BEEF & BROCCOLI MAC AND CHEESE
WHAT YOU NEED:
4-5 cups pasta*
1 tbsp butter
1 tbsp flour
4 oz cream cheese
¾ cup cheddar cheese, shredded
2 cups milk
1 lb ground beef, cooked**
1 lb bag frozen broccoli, pre-cut and washed
*NOTE: total volume will depend on the type you use. Lately we’ve been using Felicia’s cavatappi (spiral) pasta.
**NOTE: I cook mine with a few tablespoons of taco seasoning, but you can skip this.
WHAT TO DO:
1-Bring a large pot of water to a boil, then follow pasta instructions for cooking.
NOTE: I recommend cooking pasta al dente or on the lower end of the recommended cook time so it holds together when stirring in your sauce and add-ins.
2-Preheat oven to 400F and line a sheet pan with parchment paper. Arrange broccoli evenly, spray with cooking oil, then bake for 15-20 minutes or until just tender. Once cooked, finely chop.
NOTE: while your pasta and broccoli are cooking, it’s time to prep your ground beef and sauce. If you’re prepping everything from scratch, you can cook the ground beef first, set aside, then use the same pan to reduce clean up.
3-Set a large pan over medium heat. Once warm, melt butter then add flour and cook for 1 minute while stirring.
4-Add about ¾ cup milk and continue stirring the butter mixture until it starts to thicken. Add cream cheese, shredded cheese, seasonings, and remaining milk. Stirring after each addition.
NOTE: lately I’ve been experimenting with swapping about ½ of my cream cheese for pressed cottage cheese to up the protein. I get my pressed cottage cheese at Costco, but most eastern European markets have it as well.
5-Reduce heat to low, then add cooked pasta, ground beef, and chopped broccoli – stirring again after each addition. Sauce will thicken as you stir. Feel free to add more milk as needed to stir.

AIR FRYER SALMON BOWL
WHAT YOU NEED:
*amounts are approximate*
(BOWLS)
Salmon filet
White rice
Broccoli
Edamame beans
Sesame seeds, optional
Spicy mayo, optional
(MARINADE)
Bachan’s bbq sauce
WHAT TO DO:
1-Marinade salmon filets for 10-15 minutes.
2-Air fry at 400F (or “air fry” setting on Ninja Crispi) for 15 minutes or until just flaking.
3-Add remaining ingredients to a bowl, top with salmon and optional sesame seeds + mayo.
