#MadeToMoveIt Round 2 is almost here. The challenge starts July 13 and will run 4 weeks till August 9. This challenge is 100% free to join and the whole goal is to get 60 minutes of movement per day. What I’m excited about for this round is that I will be vlogging my entire experience. Last time I only shared the workout videos, but this time I am doing it right with you!! Sharing more behind-the-scenes of how I get my 60 minutes in, what I eat, what goals I’m working towards, how I deal with motivation. Plus all the science-backed tips you need to work smarter, not harder.
In today’s video I’m gonna be sharing a body update, talking about how my body has changed. Plus what my goals are and how I recommend setting goals!

CARROT CAKE GRANOLA
WHAT YOU NEED:
5 cups rolled oats
2 large, ripe bananas
¼ cup tahini (can sub smooth almond or cashew butter)
¼ cup maple syrup (can sub reduced-sugar syrup)
1 cup finely grated carrots
1 cup pecans, chopped
½ cup coconut, shredded & unsweetened
1 tsp ground cinnamon
3 tbsp ginger, minced
⅛ tsp ground nutmeg
1-2 tbsp fennel seeds (optional)
½ tsp salt
½ cup chopped dates
WHAT TO DO:
1-Preheat oven to 350 F and line two baking sheets with parchment paper.
2-In a large bowl, mash bananas then combine with tahini and syrup until smooth.
3-Stir in rolled oats, carrots, pecans, coconut, and spices. Do not stir in dates.
4-Spread evenly between baking sheets, using a spoon or spatula to press it into a thin flat layer. Bake for 15 minutes, check, then continue baking in 5 minute increments until it reaches your desired crispiness.
*TEAM TIP: for extra crispy granola, remove your baking sheets from the oven after 15 minutes and break granola up into smaller chunks. Continue baking in 5 minute increments, checking, and breaking up more until it reaches your desired crispiness.
