SNICKERDOODLE ZUCCHINI BARS
(Low FODMAP, Gluten-Free, Anti-Inflammatory)
WHAT YOU NEED:
1/2 cup coconut oil, melted
1 cup stevia baking blend
1 large egg
1 tsp vanilla extract
2 cups shredded zucchini
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
95g oat flour
95g pea protein powder, unflavored
WHAT TO DO:
1-Preheat oven to 350 F and line an 8-inch square pan with oil or parchment paper.
2-In a large bowl, combine the coconut oil, stevia baking blend, egg, vanilla extract and shredded zucchini.
3-In the same bowl, stir in the baking powder, salt, cinnamon, and nutmeg until fully combined.
4-Gradually shake and fold in the oat flour and pea protein. Continue folding until fully combined into a semi-crumbly mixture.
5-Press mixture into baking pan until it forms one even layer.
6-Bake for 40-45 minutes or until a knife comes out clean from the center. Let cool, then serve!
